Heres a really, really tasty dish, This chicken curry Potjie is a great way to be able to enjoy a great meal while entertaining, simply by adding all the ingredients to a huge pot on the stove and leaving to simmer.

2kg/ 4lb skinless chicken thighs or breasts
3 large grated onions
5 skinless tomatoes
200 g/8oz tomato paste
4 heaped teaspoons masala
3 bay leaves
2 dessert spoons crushed garlic
1 tablespoon coriander
1 teaspoon fennel
2 large sticks cinnamon
2 teaspoons salt
2 teaspn equivalent stevia sweetener
1 litre red wine
3 large carrots sliced

 

Preparation

Fry the onions and garlic in butter or oil until soft, then add the spices and allow to simmer for a couple of minutes. Next add the tomatoes and tomato paste together with half the wine and simmer for about 5 minutes.

Plonk in the chicken pieces and carrots with a little more wine. Place the lid on your pot and simmer on a low heat for about 45 minutes, checking the liquid level regularly. Add more red wine when needed. About 15 minutes before you are ready to eat add stevia extract to taste.

Serve on a bed of caulirice, cooked together with mustard seeds, turmeric and finly fried shalottes for added flavour.
